Place mixed fruit, pineapple, sugar, butter and water in a lge saucpan and place over low heat and bring to boil, simmer for 5 mins.
Remove from heat and allow to cool.
Add 1 well beaten egg and mix well.
Sift in flour and mixed spice and mix well.
Add bi carb and stir well.
Pour into a 20cm well greased cake tin and cook in a slow oven for 2 hours
mix may also be baked as mini cup cakes for 40mins in slow oven, then iced with melted white chocolate
This is a very moist fruit cake
