Ratatouille style oven roasted eggplant flavoured with balsamic. Goes great with roast lamb or beef or BBQ
Preheat oven to 180C
Grease or spray the inside of a medium casserole dish with olive oil.
Put all the vegetables into the dish mixing through the oil, balsamic, oregano and salt and pepper.
Bake for 40 mins
You can add other vegies such as capsicum, celery or olives and flavour it with fresh Thyme sprigs
