Ratatouille style oven roasted eggplant flavoured with balsamic. Goes great with roast lamb or beef or BBQ


  • 1 medium Eggplant - diced

  • 3 Roma Tomatoes - cut into small chunks

  • 1 Spanish onion - slice thinly

  • 2 cloves Garlic - crushed or finely chopped

  • 2 T Olive oil

  • 4 T Balsamic vinegar

  • 2 t dried oregano

  • salt and pepper to taste


  • 1.

    Preheat oven to 180C

  • 2.

    Grease or spray the inside of a medium casserole dish with olive oil.

  • 3.

    Put all the vegetables into the dish mixing through the oil, balsamic, oregano and salt and pepper.

  • 4.

    Bake for 40 mins


You can add other vegies such as capsicum, celery or olives and flavour it with fresh Thyme sprigs
