Oven baked snapper with veggies.


  • 1 x  whole snapper (cleaned and de scaled) enough for 4 serves .2 x large brown onions sliced2 x large red potatoes diced ( size of a 20 cent piece )2 x large carrots sliced  ( size of a 20 cent piece)1 cup chopped parsley1 x tin diced tomatoe1/2 cup olive oil salt and pepper1 x lemon Large1 x table spoon oregano

    Put snapper in baking dish put all sliced and diced veggies around fish add salt and pepper and oregano over everything pour diced tomatoes around then pour oil all over use your hands to mix all vegies together squeeze lemon over fish then you must cover the top with foil ( so it steams)hot oven 180 degrees for 20 th 30 minutes


do not over cook fish can become dry depends on the size of fish for cooking time also you can use other fish
