  • 3tsp lemon juice & enough milk to make 2/3 cup of sour milk

  • 3.5 cups SR flour

  • 2.5 cups sugar

  • 1.5 tsp bicarbonate soda

  • 1.5 tsp salt

  • 280gms butter, softened

  • 3 large overripe bananas, mashed

  • 3 eggs

  • 0.5 cups walnuts, finely chopped

  • 2 tsp cinnamon


  • 1.

    Grease 2 x 23cm round tins. Set oven to 180C

  • 2.

    Leave the lemon juice in the milk until it thickens. Sift flour into a large bowl and add sugar, bicarbonate, salt and cinnamon.

  • 3.

    Add the softened banana, butter and milk, Mix well with electric beaters on low speed.

  • 4.

    Add the eggs and beat for 2 minutes. Stir in walnuts.

  • 5.

    Pour into greased tins and bake for 35-45 minutes. Cool on wire rack and dust with icing sugar when cold.
