An easy to make slice for a weekday meal; serve with a fresh green salad


  • 3-4 medium sized zucchini grated (400gms)

  • 1 large onion diced finely

  • 5-6 spring onions finely chopped

  • 1 cup grated light tasty cheese

  • 1 1/2 cups sifted SR flour

  • 2 tbsns cold pressed olive oil

  • 3 x large eggs beaten

  • 2 tbsns chopped parsley


  • 1.

    Preheat oven to 180 C

  • 2.

    Lightly grease a loaf tin

  • 3.

    Wrap the grated zucchini in a clean tea towel and squeeze out excess liquid.

  • 4.

    Mix all ingredients together in a large bowl

  • 5.

    Season lightly with Salt and Pepper (optional)

  • 6.

    Place into the loaf tin

  • 7.

    Bake at 180 C for 45 minutes or until browned

  • 8.

    Serve immediately with a green salad
