Its a whole chicken breast( skin removed) thats been flatened out,then has a Bananna put in the middle of it & rolled with a long rashh of bacon( fat removed) Ligthy drissed with extra virgin olive oil & sprinked with with rosemary & backed in a hot oven until cooked.
It can be served with red wine sauce & vegs or you can keep it in the refridgatator over nite & slice into round parts & sever as a enteree as the bananan will formlike a gell to hold it togeather with out going brown


  • one whole chicken breast skin removed

  • one Bananna

  • one long rash of bacon* any fat removed

  • just enougth extra virgin olive oil to cover breast

  • table spoon of rosemary


  • 1.

    Preheat oven

  • 2.

    Remove skin from chicken

  • 3.

    Use a kitchen mallet to evenly to flatten chicken out on a clean kitchen chopping board

  • 4.

    Remove any fat from bacon

  • 5.

    Pell Bannan & lay on chicken & roll them togeather so as the bananna

  • 6.

    Is inside the chicken then wrap the bacon on the outside to hold togeather

  • 7.

    Place on a ligthy greasesed backing tray then smear with extra virgin olive oil

  • 8.

    & sprinkle with rosemary & bake for 40 mins or until chicken is cooked

  • 9.

    Let rest for 5 mins then on kitchen chopping board then cut into halfs

  • 10.

    & serve with a red wine sauce & seasonal vegs


If you have Problems keeping the chicken breast,banana & bacon rolled togeather you can use tooth picks to help hold it together( just dont forget to remove the tooth picks when serving.
You can use fresh sliced mmango insted of Bananna
This is a very filling meal & will serve two Adults
