Vegetable Fritters

wanted a side dish that was hot and different.

Ingredients

  • 2 tins of asparagus

  • 1 cup of parmesan cheese

  • 2 cloves of finely chopped garlic

  • handful of finely chopped parsley

  • 1 cup of breadcrumbs s and p. to taste

  • 4 large eggs

Method

  • 1.

    Break up the asparagus or mash them if you prefer

  • 2.

    Add the cheese, garlic, parsley, breadcrumbs

  • 3.

    Beat the eggs add to mixture and stir.

  • 4.

    Heat enough oil in frypan so as to brown beautifully.

  • 5.

    Fry in batches of tablespoons or larger if prefer

  • 6.

    Drain on kitcher paper and sprinkle salt.

Notes

for a main meal make portains larger and serve with salad.
