A delicous family favourite at Christmas.


  • 1/2 cup hot water

  • 220 g. can red salmon

  • 2 tspn. lemon juice

  • 1 tabspn. gelatine

  • 4 shallots or spring onions (according to taste)

  • 1/2 cup cream

  • 1 chicken stock cube

  • 1/2 cup mayonaise

  • salt/pepper


  • 1.

    Put hot water, gelatine, crumbled stock cube, in blender, blend on high speed 1 minute.

  • 2.

    Add undrained salmon, roughly chopped shallots, mayonaise, lemon juice, salt/pepper, blend further 1 minute.

  • 3.

    Add cream, blend 30 seconds.

  • 4.

    Pour salmon mixture into however many dishes required, having lightly greased them first.

  • 5.

    Refrigerate until set.

Can be served as part of a general platter or individually as an entree.
