Fresh salad a bit like tabouli but much easier to make.

Ingredients

  • 5 bunches of flat leaf parsley,(washed and dry well)

  • 1 kilo of tomatoes

  • 1 large iceburge lettuce (wash and dry well)

  • 4 lebanese cucumbers with skin on

  • 1 large green capsicum

  • 2 tablespoon of dry mint or about .5 cup of fresh mint.

  • 3 cloves of crushed garlic

  • .5 cup of olive oil

  • 1 level tablespoon of salt. (this seems like a lot of salt but this is for the whole salad.)

  • 1 cup of squeezed lemon juice.

Method

  • 1.

    Cut parsley finely and do not use stems of the parsley for the salad

  • 2.

    Chop tomatoes, cucumber, capsicum (chop to your liking)

  • 3.

    Chopped lettuce

  • 4.

    Add dry or fresh mint.

  • 5.

    In jar, mix garlic, olive oil, salt and lemon juice. Mix or shake well.

  • 6.

    Put in large bowl and pour dressing over salad and toss well.

I find it is easier to layer the salad in a large bowl: to put the

chopped tomatoes on bottom of bowl, now add the
cucumbers, then the
capsicum,
lettuce and
lastly add parsley on top.
Put salad in fridge covered.

Also put salad dressing in Jar in the fridge.

Just before guests arrive put on dressing and sprinkle dry mint or add fresh chopped mint on top and then toss salad.
This recipe is great at a party.
