Fresh salad a bit like tabouli but much easier to make.
Cut parsley finely and do not use stems of the parsley for the salad
Chop tomatoes, cucumber, capsicum (chop to your liking)
Add dry or fresh mint.
In jar, mix garlic, olive oil, salt and lemon juice. Mix or shake well.
Put in large bowl and pour dressing over salad and toss well.

Also put salad dressing in Jar in the fridge.
Just before guests arrive put on dressing and sprinkle dry mint or add fresh chopped mint on top and then toss salad.
