A fabulous and quick main course, served with rice or cous cous

Ingredients

  • 500gm boneless skinless chicken, cubed

  • 2 teasp olive oil

  • 1 onion cut into wedges

  • 1 400gm tin roma tomatoes

  • 1.5 teasp mixed spice

  • 2 teasp cummin

  • half cup chopped dates

  • 1 cup chicken stock

  • Chopped fresh coriander

Method

  • 1.

    In frypan or wok, heat oil and gently fry onion for 3-5 mins, add chicken and brown.

  • 2.

    Add rest of ingredients except coriander

  • 3.

    Mix well and simmer covered for 25 mins stirring gently every so often,

  • 4.

    Season to taste

  • 5.

    Serve topped with chopped coriander with rice or cous cous and salad of your choice
