In frypan or wok, heat oil and gently fry onion for 3-5 mins, add chicken and brown.
Add rest of ingredients except coriander
Mix well and simmer covered for 25 mins stirring gently every so often,
Season to taste
Serve topped with chopped coriander with rice or cous cous and salad of your choice
