Easy impressive entree dish for special occasions or light lunch
preparation time 10 to 15 minutes..... NO COOKING


  • 6 lettuce leaves for garnish .

  • 3 very ripe pears ...cut in half and take out core

  • 1 large tin of crab ...flaked and drained 250g-350 g

  • 2 hard boiled eggs ...mashes

  • 6 generous tablespoons of good quality mayonnaise

  • 150 gr blue Camembert in 6 slices.6 cherry tomato's ...cut in 1/2 for garnish

  • 12 to 18 slices of Melba toast


  • 1.

    Mix crab, eggs, mayonnaise...add salt and pepper to taste

  • 2.

    Cut small slice of 1/2 pear on curved side so it sits better ...reserve slice

  • 3.

    Add mixture above on top of pear ..

  • 4.

    .sit pear on garnish

  • 5.

    +1 slice of cheese

  • 6.

    + cherry tomatoes

  • 7.

    + pear slice

  • 8.

    Serve with 2-3 slices of Melba toast ..on plate next to pear

1 small french baguette..
slice it 2cm thick put on tray in oven approx. 8 minutes 180c cool
(can be made ahead )
