Minted Moroccan Beef

Easy, healthy and very very tasty!

Ingredients

  • 750g Beef Rump Steak

  • 2 tablespoons of Lemon rind

  • 2 tablespoons on fresh mint, chopped

  • 1 tin of crushed/diced tomatoes

  • 1 brown onion

  • 2 teaspoons of cumin

  • Green beans to serve

Method

  • 1.

    Slice beef rump into strips

  • 2.

    Cook onion in a small amount of olive oil until soft

  • 3.

    Add cumin and lemon rind and cook for 1 minute

  • 4.

    Add steak and cook until browned

  • 5.

    Add tinned tomatoes and simmer for 5 minutes

  • 6.

    Add mint

  • 7.

    Serve with steamed green beans

Notes

Very nice the next day for lunch!
