Breakfast Sausages with a tomato pasta sauce

Ingredients

  • 8 - 10 Breakfast Sausages

  • 1 onion (chopped)

  • Oil for frying

  • 2 - 3 cups of small pasta (shells, spiral, ribbons etc)

  • 1 - 2 cans tomato soup

  • 250gms tin of Evaporated milk

  • 1 lge green capsicum (chopped)

  • Sweet chilli sauce 1 - 2 dstspns

  • For a milder flavour use curry powder 1 - 2 tspns

Method

  • 1.

    Boil, skin and chop sausages into bite size pieces

  • 2.

    Fry chopped onion in a little oil in the same saucepan you use for sausages

  • 3.

    Once onion is transparent remove from saucepan

  • 4.

    Chop capsicum place with pasta in same saucepan cover with water and cook until pasta is al dente, drain and put back in saucepan along with sausages, onions, 1 can of tomato soup, evap milk to combine. For richer tomato flavour add 2nd can of tomato soup. Stir in Sweet chilli sauce serve immediately
