A one pot, easy,yet extremely flavoursome main meal.
Diagonally Slice pork fillet into 3 cm slices
Slice tomatoes and potatoes into roughly 1/4 cm slices (or thinner)
Finely chop or grate garlic
Finely chop rosemary and thyme.
Make alternate layers of pork, potatoe and tomatoes, covering each tomatoe
Layer with herbs, garlic and parmesan cheese, then season with salt and pepper.
Finish with a layer of potatoe slices.
When layering complete, pour 1 tblspoon olive oil and white wine over dish.
Cover and cook at 180 degrees C for approx. 3/4 to 1 hr. (Until all is cooked through)
During the last 15 minutes, uncover, dot top with butter and continue to cook.
This also works well with veal or chicken.
You can also use a medium dry sherry instead of the wine.
