At the end of a sumptuous Christmas Day Lunch, what better than a small but tasty morsel of what are the flavours of Christmas

Ingredients

  • Cranberries (2 tubs of GREAT LAKES Cranberries serves 12)

  • fresh cherries (2 per serving)

  • Sploshes of Triple Sec

  • Any Christmas Pudding (chopped into small cubes)

  • 500ml of Custard (2 packets of Instant Foster Clarks Custard works well)

  • Sploshes of Brandy

  • Thickened Cream (1 x 250ml bottle serves 12)

  • Vanilla Ice-Cream (1 scoop per serve)

Method

  • 1.

    In small water glasses (as many as Christmas guests that you will have), put at least 2 teaspoons of cranberries with juice at the bottom of each glass.

  • 2.

    Take out the pip of each cherry and put 4 halves in each glass.

  • 3.

    Splosh in some Triple Sec liqueur in each glass! Very importantly to taste!

  • 4.

    Drop in small cubes of Christmas Pudding, enough to LOOSELY fill the glass to about two-thirds full.

  • 5.

    Follow the instructions on the packet to make the custard as required.

  • 6.

    Dilute the made custard with cream and brandy to end up as a "runny" consistency, and definitely to own taste!

  • 7.

    Pour the custard into the glasses over the Christmas pudding and watch as it settles down in between the Christmas Pudding, on top of the fruit.

  • 8.

    Fill each glass with the brandied custard up to about 1/2 cm from the top of the glass.

  • 9.

    Cover with plastic film and place in fridge to chill overnight.

  • 10.

    When serving, top with a scoop of good quality vanilla ice-cream, 1 fresh cherry and 1 leaf of mint to garnish!

  • 11.

    It's small but YUMMY!

Notes

This recipe is best made the night before.
It's a quick and an excellent small dessert to have after a Christmas feast!
