At the end of a sumptuous Christmas Day Lunch, what better than a small but tasty morsel of what are the flavours of Christmas
In small water glasses (as many as Christmas guests that you will have), put at least 2 teaspoons of cranberries with juice at the bottom of each glass.
Take out the pip of each cherry and put 4 halves in each glass.
Splosh in some Triple Sec liqueur in each glass! Very importantly to taste!
Drop in small cubes of Christmas Pudding, enough to LOOSELY fill the glass to about two-thirds full.
Follow the instructions on the packet to make the custard as required.
Dilute the made custard with cream and brandy to end up as a "runny" consistency, and definitely to own taste!
Pour the custard into the glasses over the Christmas pudding and watch as it settles down in between the Christmas Pudding, on top of the fruit.
Fill each glass with the brandied custard up to about 1/2 cm from the top of the glass.
Cover with plastic film and place in fridge to chill overnight.
When serving, top with a scoop of good quality vanilla ice-cream, 1 fresh cherry and 1 leaf of mint to garnish!
It's small but YUMMY!
This recipe is best made the night before.
It's a quick and an excellent small dessert to have after a Christmas feast!
