Southern Itallian Chicken Cacciatora, a flavoursome chicken meal on noodles, rice or potato.


  • 1.5 kgs chicken pieces cut into 8 sections

  • 60 mls olive oil

  • 25 gms butter

  • 2 med onions sliced

  • 2 garlic cloves chopped

  • 400 gms canned peeled tomatoes

  • 275 mls spicy tomato sauce

  • salt and ground pepper

  • 2.5 mls celery seed

  • 5 mls crushed oregano or basil

  • 2 bay leaves

  • 60-90 mls dry white wine

  • noodles, rice or potatoes


  • 1.

    Heat the olive oil in a large frying pan, when oil is hot add chicken and saute' slowly, turning pieces till golden brown. Remove chicken and transfer to a casserole dish.

    To the frypan, add butter, onions, garlic and stir to saute' till translucent then add all to chicken in casserole dish.

  • 3.

    Add the tomatoes, sauce and seasonings to dish, cover and simmer for 45 mins, then add wine and gently cook uncovered for 15 mins, turning chicken occassionallytill tender.

  • 4.

    Discard bay leaves and skim off excess fat. Place chicken on noodles, rice or potato and spoon on the remaining sauces.

  • 5.

    Serve hot.
