My sister in law shared this recipe with me when I was complaining that my husband and youngest son would not eat zucchini. Much to my surprise, they ate it and even came back for seconds. It's become a favourite when I want something to make that takes minimal effort.


  • 375g grated zucchini

  • 3 rashers lean bacon, roughly chopped

  • 1 cup self raising flour

  • 5 eggs

  • 1 large onion, diced

  • 1 cup grated cheese (cheddar)

  • 1/2 cup oil (I use whatever is on hand such as olive oil, canola or vegetable)

  • small handfull chopped parsley


  • 1.

    Place all ingredients into a bowl. Mix until combined. Pour mixture into a lightly greased baking dish. Bake for 1 hour at 190c or until golden brown.
