  • 60 g butter

  • 1 1/2 cups self-rasing flour

  • 1 cup sugar

  • 1/4 cup cocoa

  • 1/2 cup milk

  • 2 teaspoons vanilla essence

  • 1 cup brown sugar

  • 1/2 cup cocoa (extra)

  • 2 cups boiling water


  • 1.

    Place butter in a microwave proof dish, melt on high for 1 minute.

  • 2.

    Stir in sifted flour, cocoa, sugar ,milk and vanilla.

  • 3.

    Beat until smooth with a wooden spoon.

  • 4.

    Sprinkle with sifted cocoa & brown sugar.

  • 5.

    Pour over boiling water.

  • 6.

    Cook on high for 12 minutes (watch incase it boils over).

  • 7.

    Let stand 5 minutes before serving.

  • 8.

    Serve with icecream or cream.

It's not the best chocolate pudding out there but it's pretty good considering the time and convenience. I whipped one up in about 15 mins total and eliminated my pudding craving.
