A deilghtful addition to the Christmas table; light and seasonal equally delicious served with cream or ice cream.


  • 1 large tub sour cream

  • 2 eggs

  • 2 jars cherries

  • 1 home brand vanilla cake mix ( or make your own )

  • 150gms butter

  • 1/4 cup sugar.


  • 1.

    Lightly rub softened butter through cake mix and spread in base of pre lined tin. Bake for 20mins at 180C. Meanwhile beat the sour cream then mix with the eggs.

  • 2.

    Drain cherries and spread on top of slightly cooked cake base. Top with sour cream mix and bake for 30 mins at 180 C . Place drained juice from cherries in pan add sugar and reduce to syrup consistency, use to pour over when serving.


Equally as nice with apricots or apples.
