This is a family recipe that has been passed down to me. Everytime i cook it, my friends rave about it! Its so easy to cook too!
This recipe is sure to make the skin on your chicken beautiful and crispy...

Ingredients

  • 1 whole chicken

  • Stuffing (dry)

  • Olive Oil (for basting) preferrably in a spray can form

  • 4-5 Potatoes peeled and chopped into quarters

  • Quarter of Japanese Pumpkin peeled and chopped into even size pieces (same size as potatoes)

  • Half of a sweet potato peeled & chopped into even size pieces (same as potatoes)

  • One onion peeled and chopped into quarters

  • Any other vegetables you like with your roast

Method

  • 1.

    Turn the oven onto 150C and heat for 10mins

  • 2.

    Clean the chicken and dry off. Put the chicken in a clean tray (this next bit is messy)

  • 3.

    Either spray with olive oil or poor olive oil all over the chicken making sure it is on all parts of the chicken. Then poor the stuffing mix all over the chicken until you get a nice coating over the top. If you have olive oil spray, lightly spray over the suffing to hold it on.

  • 4.

    In a baking tray add all your vegetables to the tray and spray with olive oil.

  • 5.

    In the oven, put the chicken on the middle shelf straight onto the shelf (dont put in a tray) then underneath that shelf put the tray with the vegetables. The vegetables tray will catch all the juices from the chicken as it cooks and is great for basting the vegetables.

  • 6.

    Cook chicken until juices run clear (usually about 1hr) and turn vegetables every 15mins.

  • 7.

    When it s done, carve up meat, making sure that everyone gets a bit of the crispy skin. Yum!
