This is a fresh healthy guilt free meal that can be served as a lunch or as a side dish, it can be served hot or cold and can be enjoyed all year round.


  • 3 small (180g each) chicken breast fillets

  • 1 tbs sweet paprika

  • Pinch of cayenne pepper

  • 2 tbs freshly snipped basil

  • Olive oil spray

  • 250g steamed green beans

  • 75g sun dried tomatoes

  • 1 ½ C couscous

  • 1 ½ C chicken stock


  • 1.

    Cut each breast into 3 thin escalopes, then toss in the combined paprika and cayenne to lightly coat.

  • 2.

    Bring chicken stock to the boil then add couscous, remove from heat instantly and set aside.

  • 3.

    Heat a large fry pan over high heat and spray with oil. Cook chicken, in 2 batches, for 2 minutes each side until cooked.

  • 4.

    Add chopped sun dried tomatoes, chicken and green beans to the couscous return to heat to warm.

  • 5.

    Garnish with chopped basil and season with salt and pepper.


to give the chicken a different texture try mixing flour with the spices then coating.
