This is a very simple recipe and just happens to be my husband's favourite meal. I love to cook - but there are times when something easy to prepare is great - I came up with this meal in minutes from what was in the freezer one night after work. Both my kids have added it to their recipe stables.
You will find the cheese melts into the sauce - yum!


  • Chicken Thighs (boned and skin off) (2 small or 1 large thigh per person)

  • Prosciutto (about 2 strips for each chicken thigh)

  • A small piece of cheese (I use what I have on hand - a good cheddar is ideal)

  • Olive oil

  • 2 Tsp of flour

  • freshly ground Black Pepper

  • 2 tsp of chopped thyme (if not available marjoram is also good)

  • 1 small glass of white wine

  • .5 glass of water


  • 1.

    Place the piece of cheese in the chicken thigh and wrap the posciutto around the thigh.

  • 2.

    Heat olive oil in a pan and lightly brown the wrapped thigh on all sides.

  • 3.

    Remove the thighs from the pan

  • 4.

    Sprinkle flour in the pan and stir to gather up the pan drippings.

  • 5.

    Add the chopped herbs to the pan.

  • 6.

    Add the wine and water and stir until the sauce is free of any lumps.

  • 7.

    Add the wrapped chicken thighs to the pan.

  • 8.

    Cover and let simmer on a very low heat for about 20 minutes.


I have found any left over cheeses are good in this recipe. I also tend to use the herbs that are plentiful in my garden at the time. I have experimented and added onion and garlic etc.
