A family favourite and can be prepared the day before, an easy entree or main course to make


  • 500 gr lean diced pork

  • 2 celery stalks sliced

  • 2 carrots peeled and cut into rings

  • 1 cup of rice

  • 1/2 cup chicken stock

  • salt and pepper to taste

  • splash olive oil


  • 1.

    Add olive oil to fry pan when hot add pork and fry until the pork browns. Add celery, carrot and rice and chicken stock (mixture needs to be just covered in stock to allow rice to cook if not enough chicken stock to cover add a little water).

  • 2.

    Cover pork and rice dish and simmer until rice is cooked through add salt and pepper to taste and serve on it's own or with fresh vegetables.
