Fruit Piklets

tasty, banana and strawberry piklets sprinkled with cinnamon sugar.
I made these the other day for a neighbourhood Christmas party and they were a great hit.

Ingredients

  • 1 large over ripe banana

  • 2 cups hulled and chopped strawberries

  • 1 cup of self raising flour

  • 3 tablespoon sugar

  • 2 teaspoon butter or marg

  • .25 teaspoon of bi carb soda

  • .75 cup milk add more if needed

  • 1 egg

  • pinch salt

  • sugar mixed with cinnamon powder

Method

  • 1.

    Place flour, sugar,bi carb, salt and butter in microwaveable bowl. Heat for 30 seconds or until butter melts. Add milk, egg and mashed banana . This batter can be mixed with beater or by hand.Mixture should be thick but pourable. Then fold in strawberries.

  • 2.

    Spoon mixture into heated and greased fry pan. Dont have pan too hot or mixture will cook on outside too quickly and will not cook in the middle.I use a dab of butter to a splash of olive oil.

  • 3.

    Flip over when you can see little bubbles form and burst all over the piklet and bottom of piklet is light brown.

  • 4.

    You may need to add more greasing product each time you add new piklet mixture so they dont stick to the pan.

  • 5.

    When cooked lay out on absorbant paper towel. Sprinkle with a blend of sugar mixed with cinnamon powder.Allow to cool.

  • 6.

    Serve on their own or with a topping of whipped cream.

Notes

Try substituting strawberries for other berry fruits or try substituting whole meal flour for white.
These would make a great snack for children.
