A quick and easy family favourite.


  • BASE

  • 1 cup biscuit crumbs

  • 1/4 teaspoon nutmeg

  • 1/4 teaspoon cinnamon

  • 3 tablespoons melted butter


  • 1 cup cream cheese

  • 1/2 cup condensed milk

  • 2 tablespoons lemon juice

  • 1/2 cup whipped cream


  • 1.

    Mix biscuit crumbs, spices and melted butter. Press into a 8" greased springform pan. Chill well. Beat cream cheese until soft. Gradually beat in condensed milk and lemon juice. When smooth fold in whipped cream. Set in fridge for at least 3 hours but overnight is preferable.


Some biscuits are quite dry so more butter may be needed. Try gingernuts for a nice spicy base but omit the other spices.
