Line a tin with foil (to make it easier to remove cheesecake
In a bowl crush 1 pack of hazelnut biscuits, slowly add melted butter until the mixture is firm (but not runny). Press biscuit base into the lined tin (so that it covers the entire base and some of the sides
Using an electric mixer (not food processor) blend cream cheese and sweetened condensed milk together, add lemon juice (@ 3-4 generous tablespoons until the mixture thickens slightly.
Pour over the prepared base and sprinkle with nutmeg, chill and enjoy!
NB: can add up to 1/2 cup cream to lighten the mixture
do not use "light" cream cheese as it will not set. can use any type of biscuits for the base, so long as they are pretty crunchy and not too soft (ie: dont use shortbreads as they will not firm properly)
serve with fresh fruit or raspberry sauce
