Tasty yet easy chicken dish
Combine rind, juice, salt, herbs and soup. Cut chicken into pieces and place in a baking dish. Bake uncovered at 180C until browned and drain off the fat.
Add the soup mix and continue baking for at least another hour. Sprinkle with grated mozzarella cheese for the last 10 minutes, if desired.
Delicious with rice and vegetables.
