Fried Salmon portions stuffed with lemon butter, wrapped in proschiuto, served on grilled asparagus.


  • 2 salmon portions

  • 3 Tbl spoons butter or margarine

  • 1 Tbl spoon chives finely chopped

  • 1 lemon rind grated

  • 4 Thin slices of proschiuto

  • 1 bunch asparagus

  • Olive Oil for frying

  • extra Olive Oil to serve


  • 1.

    Combine butter, chives and lemon rind in a bowl and mix well,

  • 2.

    Cut a small slit length ways in the salmon,

  • 3.

    Spread butter mixture inside the salmon slit,

  • 4.

    Wrap each portion with 2 slices proschuito to cover,

  • 5.

    Use tooth picks to hold,

  • 6.

    Heat Griddle and cook asparagus until just cooked,

  • 7.

    Set aside,

  • 8.

    Heat olive oil in frying pan, cook Salmon to your liking,

  • 9.

    Serve Salmon on top of asparagus, drizzled with good quality olive oil, and your favourite side dish
