A wonderful sweet slice for the festive season!
Melt Copha in a saucepan on the stove over low heat.
While the Copha is melting, mix all the dry ingredients in a bowl.
Set aside melted Copha to cool.
Add vanilla essence to dry mixture.
When Copha has cooled off (but not solidified), add it to the bowl and mix well.
Pour into a slice tin lined with baking paper.
Leave in fridge to set for approximately 30 mins.
Cut up and eat!
Baking paper in the tin makes the slice easier to lift out and cut up.
I use apricot and multi coloured glacé cherries for a festive feel.
This is a great recipe for kids (under supervision, of course), and, depending on portion size, can feed a crowd!
