A delicious way to use home grown zucchini's.


  • 1 very large zucchini

  • 1 onion

  • 1 large potato

  • 1 tbsp oil

  • 1/2 tsp curry powder

  • 4 cups water

  • 2 chicken stock cubes


  • 1.

    Roughly chop zucchini, peeled onion & potato. Fry in 1 tbsp oil until a little golden. Add other ingredients & simmer until tender. Puree with a stick blender. Serve with toasted croutons sprinkled with parmesan cheese and/or a drizzle of cream.


If you don't have home grown zuchini's buy 6 medium ones.
