Phirni - Creamy Rice Delight

Phirni is a traditional Indian rice pudding... very simple to make and delicious in taste!

Ingredients

  • 1. milk - 1 liter

  • 2. rice - 3 tbsps

  • 3. roasted mixed nuts (any of the three or combines almonds, walnuts, cashew) - handful - chopped (blend them very coarsely)

  • 4. raisins - few (optional)

  • 5. saffron - few strands (optional)

  • 6. sugar - 1 cup - increase or decrease as per you liking.

  • 7. cardamom powder - 1 tsp

  • 8. clarified butter (ghee) - 1 tsp (optional)

Method

  • 1.

    Soak the rice in water for at least 40 mins after which make a paste with little water & keep aside

  • 2.

    Boil milk after its heated up add the rice paste

  • 3.

    Keep stirring... when you see that the milk has become thick (as the rice gets cooked) Add the sugar, the nuts and the cardamom pwd & stir to dissolve the sugar

  • 4.

    Fry the raisins in the clarified butter (ghee) till they puff up.. add to the milk mixture

  • 5.

    Garnish with some chopped nuts & the saffron strands.

  • 6.

    Best served cold

Notes

* You can use jaggery (unrefined brown sugar) instead of sugar * In case the cashews are old you can also roast them like the raisins to add more flavour * You can soak the saffron in little water for a few mins & add that to the milk mixture * For garnishing you could also use: rose petals, strawberries, grapes, etc instead of the nuts & saffron strands.
