  • 750g watermelon

  • 1/2 cucumber

  • 45 g stoned black olives in brine

  • Dressing:

  • 30g feta cheese, rinsed and dried

  • 2 tablespoons low fat natural yoghurt

  • 2 teaspoons chopped fresh dill

  • salt and pepper


  • 1.

    Cut flesh of watermelon away from the rind and cut into bite sized pieces.

  • 2.

    Remove seeds and reserve any juice.

  • 3.

    Halve cucumber lengthwise and scoop out seeds with teaspoon.

  • 4.

    Cut into 2cm cubes.

  • 5.

    Toss cucumber, watermelon and olives in a large bowl. Give a good grind of black pepper over top.

  • 6.

    To make the dressing crumble feta into a small bowl, add reserved juice with the yoghurt and mash together.

  • 7.

    Stir in dill and season to taste.

  • 8.

    Serve alongside salad with crusty bread.

If watermelon unavailable try rockmelon or honeydew instead. Either work really well and, if adventurous you could add them as well for added flavour and colour.
