A really different salad for summer. Not only perfect for keeping weight down it tastes fantastic. The dressing is a great recipe to use with other dishes as well.
My sister gave this recipe to me and I made this for a bbq party.It was gone in
literally minutes and was such a hit I was inundated with people wanting the recipe.
Cut flesh of watermelon away from the rind and cut into bite sized pieces.
Remove seeds and reserve any juice.
Halve cucumber lengthwise and scoop out seeds with teaspoon.
Cut into 2cm cubes.
Toss cucumber, watermelon and olives in a large bowl. Give a good grind of black pepper over top.
To make the dressing crumble feta into a small bowl, add reserved juice with the yoghurt and mash together.
Stir in dill and season to taste.
Serve alongside salad with crusty bread.
