Delicious yet so easy to make! These can be made ahead of time and stored in the freezer. They also make ideal gifts.
Soak prunes in rum for 5-10 minutes.
Mix all ingredients together well. Leave in the fridge until firm (approx 20 minutes).
Roll into small bite-sized balls and toss in coconut.
Store in the fridge or freezer in an airtight container.
For a festive ice-cream Christmas pudding, chop rum balls into four pieces and stir through softened ice-cream with some extra rum. Place into a pudding bowl lined with cling film, cover and freeze until set. Once set this can be turned out on a plate for an alternative to the traditional Christmas pudding.
