It's a classic creamy potato salad that has loads of flavour and you can vary as much as you like by adding fresh herbs, bacon, smoked salmon or anything else you have in the fridge.


  • 6 x cooked and cut potatoes

  • 4 x hard boiled eggs

  • 1/2 cup sour cream

  • 1/2 cup kewpie mayonnaise

  • 1 x tablespoon dijon mustard or

  • 2 x roasted garlic cloves

  • 3 x tablespoon chopped fresh chives


  • 1.

    Cut up the potatoes and eggs. Mix the dressing, half sour cream, half mayonnaise and add the extra flavourings you prefer. Season. Mix together with potatoes in a large bowl while the potatoes are still hot.


The kewpie mayonnaise is a Japanese mayonnaise found in the asian section of the supermarket, it makes a big difference if you use this product.
