Tasty and fresh, filling and fabulous. A quick and delicious soup with lots of goodies to tantalise the tastebuds.
Heat oil in pan, add onion and garlic, cook till translucent (couple of minutes)
Stir in chilli sauce and turmeric.
Add water and fish sauce and bring to boil.
In a separate bowl, pour boiling water onto rice noodles and leave till soft.
Reduce heat and add seafood and bok choy, simmer for 2-3 minutes until prawns change colour.
Add coconut cream, stirring well. Do not boil.
Put noodles into serving bowl and top with soup.
Serve with fresh coriander and finely sliced spring onions. Enjoy!
