Tasty and fresh, filling and fabulous. A quick and delicious soup with lots of goodies to tantalise the tastebuds.

Ingredients

  • 1 tbsp oil

  • 1 oinion, chopped

  • 1 clove garlic

  • 1 tbsp chilli sauce

  • .25 tsp turmeric

  • 1 x 375gm pack of rice noodles or vermicelli

  • 4 cups water

  • 2 tbsp fish sauce

  • 250g green prawns, peeled and deveined

  • 250g calamari rings

  • 250g fish, sliced and deboned

  • 2 cups chopped bok choy

  • 2 x 165g tin coconut cream

  • Coriander and spring onions as garnish

Method

  • 1.

    Heat oil in pan, add onion and garlic, cook till translucent (couple of minutes)

  • 2.

    Stir in chilli sauce and turmeric.

  • 3.

    Add water and fish sauce and bring to boil.

  • 4.

    In a separate bowl, pour boiling water onto rice noodles and leave till soft.

  • 5.

    Reduce heat and add seafood and bok choy, simmer for 2-3 minutes until prawns change colour.

  • 6.

    Add coconut cream, stirring well. Do not boil.

  • 7.

    Put noodles into serving bowl and top with soup.

  • 8.

    Serve with fresh coriander and finely sliced spring onions. Enjoy!

Notes

Any seafood you like that will hold it's shape can be used, add fresh chopped chillies if you like it hot. Powdered coconut milk can be used instead of canned, just follow instructions on box to make it before adding to soup. Rice can be substituted for the noodles.
