This is a great way to get children who are fussy vegetable eaters to finally enjoy them. My husband & children dont eat zucchini, but they ask me quite often to make this dish for them.

Ingredients

  • 5 eggs

  • 4 cups grated zucchini

  • 2 onions, finely diced

  • 3 or 4 bacon rashers, finely diced

  • 1 cup grated cheese

  • 1 cup Self Raising flour

  • 1/2 cup canola oil

  • 1 pacet chicken noodle soup mix

Method

  • 1.

    Mix all of the ingredients in a large bowl, until well combined. Pour mixture into a greased casserole dish. Bake in a preheated moderate oven (180 c), for about 30 minutes or until golden brown and set in the centre.
