Butterfly the chicken breasts, and pound with a tenderiser set aside.
In a blender or mortle and pestle combine the pine nuts, garlic, coriander,and parsely. Add a splash of virgin olive oil to combine.
Spread the combined mixture and slices of the cheese on one side of the chicken breasts, fold over to cover then wrap slices of proscuitto around each of the breasts to hold together.
Wrap each prepared chicken breast in baking paper
Preheat oven to 180 to 200 degrees
Place chicken in oven for approx 20 mins
Remove from oven, unwrap the baking paper and place on serving plate.
Serve with steamed asparagus
