Chicken A La Glenys

I have always had a cholesterol problem and so many years ago I began to try and create tasty recipes with as little saturated fat as possible.

Ingredients

  • One skinned 1.5kg chicken.

  • Twelve pickling onions, peeled.

  • Twelve baby potatoes in their skins.

  • Four rashers short cut bacon, diced.

  • Four sprigs of Fresh thyme, or more to taste

  • One bunch fresh parsley

  • One bay leaf

  • Two tablespoons Olive oil

  • Salt and freshly ground black pepper.

Method

  • 1.

    In a heavy based oven casserole dish brown the chicken all over in a little of the olive oil.

  • 2.

    Rremove chicken to a plate a keep warm.

  • 3.

    Brown off the unpeeled potatoes. onions and diced bacon.

  • 4.

    Return chicken to casserole .

  • 5.

    Add the bay leaf, parsley and thyme and a good seasoning of salt and pepper.

  • 6.

    Cover the casserole and place in a preheated 180C oven for 1 hour 15 minutes..

  • 7.

    Place on a serving plate and serve with green beans .

Notes

A crusty loaf is good to soak up the juices .
