An easy mince dish that all the family enjoy, my kids love it with Burritos, Rice or even Mashed Potato.

Ingredients

  • 500g minced beef

  • 1 medium onion (finely chopped)

  • 1 large carrot (grated)

  • 1 750g can kidney beans (drained)

  • 1 400g can tomatoes or tomato puree

  • 1-1½ cups vegetable stock or water

  • 2 Tbsp Oil

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1Tbsp cocoa powder

Method

  • 1.

    In a 3-litre saucepan heat the oil

  • 2.

    Fry onion and carrot until soft

  • 3.

    Add minced beef and brown

  • 4.

    Add cumin, coriander and cocoa powder and stir through

  • 5.

    Add canned tomatoes (chop if preferred), kidney beans and stock

  • 6.

    Bring to boil and simmer over low heat for 1-2 hours

  • 7.

    Remove lid half way through cooking to reduce liquid

  • 8.

    (Freezes well)
