Quick easy,and one for the kids to help with.grate zuchines,carrots and cheese,dice onion,ham and bacon then fry untill soft,beat 8 eggs add all ingredients,sprinkle some cheese on top,put in oven

Ingredients

  • 2 Large Zuchinies,2 large Carrots,1 large Onion,1/2 cup of Diced Bacon and Ham,8 large Eggs,1 1/2 cups of grated Cheese

Method

  • 1.

    Beat the Eggs,Grate the Zuchinies and Carrots and mix with eggs,Grate Cheese and add to eggs leave a little a side to sprinkle on top,Fry diced Bacon,Ham and Onion in a pan untill soft,let it cool then add to egg mixture,poor the mixture into a oven proof dish,then sprinkle the remaining cheese on top,and place in pre-heated oven,cook until golden brown.Have with Salad of your choice.

This recipe is great for getting the kids involved other then just eating it!!!They can beat the eggs and do all the grateing...If you love Cheese you can add as much or as little as you like.If you have kids who dont like there vegies,this is perfect for them.I always make 2 lots so i can keep some in the freezer for those days when i dont feel like cooking.
