An easy to follow Impossible Pie recipe where the dessert makes its own crust and the inside is a coconut custard cream.


  • 4 eggs

  • 125g soft butter

  • 1/2 cup plain flour

  • 2 cups milk

  • 1 cup sugar

  • 1 cup coconut

  • 2tsp vanilla


  • 1.

    Blend all ingredients and pour into a pie dish

  • 2.

    Grate fresh nutmeg over top

  • 3.

    Bake 1hr at 180 degrees or until firm in the centre
