Nutty and flavoursome noodles that are perfect for a midweek meal.
Dry-fry or roast the peanuts until they are slightly browned.
Whiz the garlic, ginger & chilli in a food processor until finely minced.
Add the peanuts, oil and soy sauce and whiz again until a slightly coarse paste is formed (kind of like peanut butter – add a bit of warm water if you want to thin it out a bit).
Cook your noodles in boiling water until just soft (follow packet instructions), then toss noodles with the peanut sauce.
Serve topped with finely sliced green shallots and chopped coriander leaves, with your freshly steamed green vegetables on the side.
