A quick recipe for an afternoon tea (or dessert) that can be created in minutes from items in your fridge or freezer – great for unexpected visitors!

Ingredients

  • 2 sheets of puff pastry

  • 1 egg

  • 2 table spoons of brown sugar

  • 2 apples

  • sprinkle of cinnamon

Method

  • 1.

    Cut a sheet of the puff pastry in to 4 squares.

  • 2.

    Beat egg in a bowl and brush over pastry.

  • 3.

    Slice the apple (doesn't have to be peeled) and cover the pastry squares, leaving a 1cm clearance around the edges.

  • 4.

    Sprinkle with brown sugar.

  • 5.

    Sprinkle with cinnamon.

  • 6.

    Place on a baking tray (with baking paper to make it easier to clean) and bake for around 20mins on 180 degrees celsius.

  • 7.

    Leave to cool slightly on tray for 5 mins and serve with fresh vanilla ice cream.

Tip: When I have fruit when fully ripe, I pop thm in the freezer ready to be used when I am next ready to bake - very economical!

You could also use other fruit such as apricots, nectarines etc
