a mayonaise free potato salad

Ingredients

  • 6 x large potatoes

  • extra virgin olive oil

  • half cup x fresh dill

  • 1 tablespoon x capers

  • 1 tablespoon x seeded mustard

  • salt & pepper to taste

Method

  • 1.

    Boil bite sized pieces of potatoes until al dente

  • 2.

    Drain & allow to cool

  • 3.

    Add: roughly chopped fresh dill, seeded mustard, baby capers, salt & pepper to taste

  • 4.

    Drizzle of extra virgin olive oil

  • 5.

    Mix altogether and put in fridge until ready to serve.
