Mediterranean Penne with Bacon Style Rashers

A versatile product suitable for a wide variety of dishes! Give the traditional big breakfast a makeover using Bacon Style Rashers served with grilled tomatoes, mushrooms and thick cut multigrain toast. Poach, scramble or fry your eggs and serve on a wholemeal muffin. Bacon Style Rashers are also delicious scattered throughout salads like caesar and potato salad. Simply cook in a frypan or on the BBQ plate.


  • 145g pack Vegie Delights Bacon Style Rashers, finely sliced

  • 400g Penne Pasta cooked according to packet instructions

  • 1 large eggplant, diced

  • 4 tomatoes, skinned, deseeded and roughly chopped

  • 1 red onion, finely diced

  • 3 cloves garlic, finely sliced

  • 2 tbsp mint, chopped

  • 2 tbsp flat leaf parsley, chopped

  • 2 Tbsp Extra Virgin Olive Oi

  • 1 or 2 balls of mozzarella di bufala* chopped into small pieces

  • 2 tbsp freshly grated parmesan

  • Freshly ground black pepper


  • 1.

    Fry the eggplant with 2 tbsp of olive oil until lightly golden. Then add the onion, garlic, mint and parsley. Fry until onion is cooked, approximately 3-4 mins.

  • 2.

    Add the tomatoes and cook for a further 2 mins. Add the Bacon Style Rashers, heating through for no more than 2 minutes.

  • 3.

    Add the mozzarella and toss with the pasta. (Mozzarella di bufala is available from your local supermarket).

  • 4.

    Serve Parmesan and season with black pepper.
