watch Neil Perry make this then added my twist. this salad is great for a bbq.

Ingredients

  • 10-12 Potato Mixture of Bison, King Edward and Nicolas

  • Extra Virgin Olive Oil

  • Juice of 1-2 Lemon

  • 0.25 teaspoon grated lemon zest

  • Sea Salt & freshly ground black pepper

  • 1 tablespoon heaped grain Mustard

  • 0.25 cup chopped chive

  • 0.5 cup Italian Parsley picked and washed

  • 0.25 cup sliced spring onion

  • 6-8 slices of Bacon grilled until crisp

Method

  • 1.

    Steam potatoes over boiling water

  • 2.

    While still warm, cut in half (use gloves if necessary) and place in large bowl.

  • 3.

    Drizzle over oil and lemon juice. Season well with salt and pepper.

  • 4.

    Set the potatoes aside for a few minutes to allow them to soak up the flavours.

  • 5.

    Stir through the mustard, chives, parsley and bacon. Serve the salad in the bowl.
