Zucchini and Carrot Polpette's

A delicious blend of zucchini and carrots shaped into little polpette's.


  • 4 Zucchini's

  • 1 Large Carrot

  • 1 Onion

  • 1 to 2 Garlic's

  • 1 Egg

  • A few tablespoon of Bread Crumbs

  • Salt

  • Pepper

  • Mixed Spices

  • Little Extra Virgin Olive Oil


  • 1.

    Peel and grate 4 zucchini's, squeeze the excess juice out of the zucchini.

  • 2.

    Peel and great one large carrot.

  • 3.

    Chop one onion into small pieces.

  • 4.

    Chop 2 garlic's into small pieces.

  • 5.

    To a dish add the above ingredients, to this add 1 egg, salt, pepper, mixed spices and a few tablespoons of bread crumbs.

  • 6.

    Mix well, take a small handful of the mixture into your hand and start shaping into polpette's.

  • 7.

    Heat a small pan and to it add a few tablespoons of extra virgil olive oil.

  • 8.

    Add the Polpette's to the pan and gently fry each side for 2 to 3 minutes.

  • 9.

    Serve on a plate.
