Quick Goats Cheese Ravioli

Ready-made wanton wrappers make easy work of these delicious cheesy parcels. Serve with a vegetable salad for extra vitamins!

  • 200g of well matured goat's cheese, crumbled

  • Zest and juice of 1 small lemon

  • 1 small red chilli, seeded and finely chopped

  • One small bunch of basil, picked and finely sliced

  • 12 wonton wrappers

  • Spring vegetable salad

  • 100ml extra virgin olive oil

  • Zest and juice of 1 lemon

  • 4 cooked baby artichokes, halved

  • 200g peas, blanched

  • 200g broad beans, blanched

  • 6 baby carrots, halved and blanched

  • Salt and pepper


  • 1.

    To make the ravioli filling, mix the goats cheese together with the lemon zest and juice, half of the chopped chilli and half of the sliced basil. Season and set aside.

  • 2.

    Put a small spoonful of this mixture in the centre of each of the wonton wrappers, dampen the edges and fold them over to make 12 triangles. Seal the edges well and set aside on a floured tray.

  • 3.

    To make the spring vegetable salad, warm the olive oil with the lemon zest, lemon juice and the second half of the chopped chilli. Add the vegetables, warm through gently and add the remainder of the basil, season well.

  • 4.

    To serve, cook the raviolis for 3-4 minutes in barely simmering salted water, lift them out with a slotted spoon and serve on top of the vegetable salad.
