Enjoy these mini pizzas made from scratch and simple topped with mozzarella, plum tomatoes and basil.


  • For the dough

  • 500g strong white flour

  • 15g salt

  • 25g yeast

  • A splash of olive oil

  • 300ml water

  • 50g sugar

  • For the topping

  • A drizzle of basil oil

  • 4 ripe plum tomatoes, sliced thinly

  • 300g Mozzarella, thinly sliced

  • A handful fresh basil


  • For the dough:

    Mix all ingredients together and leave to rest for 2 hours.

  • For the pizza:

  • 1.

    Roll the remaining dough out and place it onto a baking tray. Drizzle the basil oil over the dough. Place the sliced tomatoes and sliced mozzarella alternatively over the dough.

  • 2.

    Place the pizza into a hot oven (230-240C) and bake for 10 minutes. When the pizza is cooked, rip some basil leaves over the top, slice it into bite sized rectangles and serve.
