Full of flavour this mildly spiced chutney is great served immediately or bottled for future use.


  • 1oz (25g) butter

  • 1 large onion, chopped

  • 1lb (450g) plums, halved and stoned

  • ½ inch piece of fresh ginger, grated

  • Dash of Balsamic vinegar

  • Soft brown sugar to taste

  • Salt and pepper


  • 1.

    Melt the butter in a large pan and add the onion. Saute for a few minutes until soft. Now add the plums and the ginger and cook gently for 10 minutes. Add the balsamic vinegar and sugar to taste. Season. Serve immediately or bottle.
